     Chicken Enchilada Soup

Ingredients
1/2 cup Mexican Shredded Chicken
10 oz diced tomatoes with green chilies
14.5 oz diced tomatoes
1 cup frozen corn thawed
1 med. onion, diced
1 jalapeno, diced
2 cloves garlic, minced
4-6 cups low sodium chicken broth or stock
1 tbsp olive oil
 
you can really make this your own with whatever ingredients you like and however spicy you want it

Instructions
Tortilla Strips (to use as a topping-optional)- -corn tortillas -olive oil cooking spray -salt Optional toppings - avocado, cheese, lime, sour cream, cilantro
-In a large pot add the oil and onions and jalapeno and cook over medium-high until soft -Add garlic and stir for 1 minute (but don’t let it brown/burn) -Add tomatoes, corn, and seasoning and stir -Add chicken broth and chicken -Stir and serve
To make homemade tortilla strips- -Preheat your oven to 350 -Cut the corn tortillas into strips. -Spray with olive oil spray and sprinkle with salt. - Bake for about 10-15 minutes.
