     Chicken Cheese Jalapeno Balls

Ingredients
3-4 boneless cooked chicken breast or a rotisserie chicken from the store
1 teaspoon ground black pepper (optional or to taste)
1 teaspoon of seasoning salt (optional or to taste)
1 3/4 cups sharp Cheddar and Colby cheese
1-2 chopped jalapenos or ½ a jar of jalapenos
1 cup all-purpose flour
3 eggs, lightly beaten
2 cups of bread crumbs
Vegetable Oil, for frying
 

Instructions
- Heat oil heated to 350 degrees F. - Place the chicken in a large bowl and shred - Add pepper, seasoning salt, cheese, and jalapeno to chicken and toss to combine. - Roll the chicken into 2-ounce balls, about the size of a golf ball. - Place the flour, eggs, and bread crumbs in 3 separate bowls. - Roll each ball in the flour, then the egg and then the bread crumbs. - Set aside. - When the oil is hot fry the chicken balls in batches, Cook for about 2 minutes per batch. - Remove the chicken and let stand for 3- 5 minutes. - Serve with ranch or with pepper relish & Enjoy!
