     Slow Cooker Jalapeno Popper Chicken Taquitos

Ingredients
3-4 chicken breast
8oz cream cheese
1/3 cup jarred or sliced jalapenos, roughly chopped
1tsp garlic powder
1tsp salt
1tsp cumin
16 taco sized tortillas
1 ˝ cups shredded cheese (Colby jack, Monterey jack, Mexican blend—your favorite!)
Optional toppings- fresh cilantro, jalapenos, salsa, ranch, or homemade tomatillo ranch dressing
 

Instructions
- Add chicken, ˝ cup of water, cream cheese, jalapenos, garlic powder, salt and cumin to crockpot. Cover and cook 6-8 hours on low, or 3-4 on high.
- Before serving preheat oven to 425 and grease baking sheet with cooking spray
- Use forks to shred chicken and stir in with other contents of the crockpot
- Heat tortillas for a few seconds in the microwave, sprinkle cheese in the middle of each tortilla. Top cheese with 2-3 tablespoons of shredded chicken mixture, roll tortillas tightly into taquito. - Place on baking sheet and spray the tops with more cooking spray, bake 10-15 minutes until cheese is melted and tortillas are crispy. - Serve warm, with sauces and various toppings
