Corn Tortillas (depends on how many enchiladas you want to make)
1 cup Shredded Cheese
Instructions
Preheat oven to 425. Wrap the tortillas in a
damp paper towel and microwave for 30 seconds
to soften them.
Spray baking sheet with nonstick cooking spray
and set aside.
Mix chicken and cheese together. Add about 1 TBSP
chicken/cheese to one tortilla at a time and roll
it up. Add it seam side down to your baking sheet
(leave space between each taquito).
Spray taquitos generously with nonstick cooking
spray.
Bake for about 15-20 minutes until golden brown.
Serve with your favorite dipping sauces (queso,
salsa, sour cream, etc).
