Crockpot Chicken Wild Rice Soup

1/2 cup wild rice, uncooked rinsed
|
|
1 onion chopped
|
|
4-5 garlic cloves, minced
|
|
1 cup carrot, chopped
|
|
3/4 cup celery, chopped
|
|
1 lb chicken breast, boneless, skinless (2-3 breasts)
|
|
1 Tbsp Italian seasoning
|
|
6 cups chicken broth
|
|
2 cups water
|
|
|
|
1-2 bay leaves
|
|
5 Tbsp butter
|
|
1/2 cup flour
|
|
2 cups milk
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|

|
|
|
|
|
|
|
|
|
|

Instructions |
|
|
Put all ingredients (other than for roux) in
crockpot. Cook on high for 4 hours. Remove
checken after 3 1/2 hours and shred. Return to
pot.

Melt butter, stir in flour then slowly stir in milk
until thick. Stir into soup in crock pot until
heated through. Yum!

|
I used 1% milk, turned out fine. For richer creamy soup use half and half.
