     Fat Fighting Minestrone Soup

Ingredients
2 Onions, Chopped
2 Carrots Sliced
2 celery stalks, chopped or thinly sliced
4 Cups Chicken Broth
3 Cups Water
1 (14.5 oz0 CAN DICED TOMATOES
1/2 Tsp dried oregano
1/4 tsp salt
1/2 tsp Black Pepper
 
2 cups green beans, cut into 1/4 inch pieces
1 cup cooked small pasta
1/2 cup canned Chick Peas
1 (15oz) Can Kidney beans, rinsed and drained
4 cups chopped fresh spinach
5 Tbs grated Parmesan cheese

Instructions
Combine onions, carrots, celery, broth, water, tomatoes with their juice, oregano, salt and pepper in a large pot. Bring to boil. Reduce heat and simmer, covered until carrots soften, 15 mins.
Stir in green beans and cook, covered, until tender, about 8 minutes. Add pasta, chick peas, beans and spinach. Stir until heated through, about 3 minutes.
Enjoy, topped with Parmesan.
