In a food processor, pulse Shrimp until chunky, add
butter and shallots and pulse until well blended.
Let sit for a couple minutes to exchange flavors.
Add Old Bay, liquor and Cream Cheese, blend
thoroughly. Let sit for a couple minutes to
exchange flavors. Add Lemon Juice and Chives, blend
thoroughly. If too thick, adjust with lemon juice
or liquor.
