     Shrimp Paté Richard

Ingredients
Butter-1/4 C (softened)
Shallots-1 Tblsp (fresh or dried)
Shrimp-1 lb (peeled and deveined, already cooked)
Old Bay-˝ tsp
Sherry or Cognac or Armangac-1 Tblsp dry
Cream Cheese-8 oz (softened)
Lemon Juice-1 Tblsp
Chives-1 Tblsp (chopped/minced fresh or dried)
 

Instructions
In a food processor, pulse Shrimp until chunky, add butter and shallots and pulse until well blended. Let sit for a couple minutes to exchange flavors. Add Old Bay, liquor and Cream Cheese, blend thoroughly. Let sit for a couple minutes to exchange flavors. Add Lemon Juice and Chives, blend thoroughly. If too thick, adjust with lemon juice or liquor.
Spoon into serving container, cover and chill. Serve with toasted pita chips, toasted baguette slices or crackers. Makes about 1.75- C This makes a good paste for Tea-Time sandwiches.
