     Zucchini or Pumpkin Loaf

Ingredients
DOUBLE BATCH
2 cups white sugar
2 cups brown sugar
1 1/2 cuos butter
6 cups zucchini
1 1/2 cups water (if not using pineapple)
8 eggs
2 tsp. vanilla
 
6-2/3 cups flour
3 tsp. Baking soda
1 tsp. salt
1 tsp. Baking powder
2 tsp. cinnamon
1/2 tsp. Cloves
2 14oz. Cans crushed pineapple (replaces water)
2/3 X2 walnuts
2/3 X2 raisins

Instructions
For pumpkin- use 1 can (16oz.)pumpkin in place of zucchini, omit vanilla and pineapple. Double cinnamon and cloves, add 1 tsp. Nutmeg
Bake at 350 for 60 - 70 min. In large loaf pans, 30- 40 min. If using mini loaf pans. Double Recipe made 5 loaves - 40-45 min.
