     LONG RUN MINERAL BROTH

Ingredients
1 medium beet, scrubbed and quartered
1 yellow onion, unpeeled and quartered
3 carrots, unpeeled and cut in to thirds
1/2 bunch celery (hearts and leaves, cut in to thirds
2 sweet potatoes, unpeeled and cut in to chunks
1/2 bunch fresh parsley
5 large cloves of garlic, unpeeled and smashed
1 inch knob of ginger, unpeeled and sliced
8 inch strip kombu (seaweed)
 
6 black peppercorns
1 bay leaf
4 quarts of cold filtered water
2 teaspoons sea salt

Instructions
Rinse vegetables and place in stockpot. Bring to boil and simmer for 1 1/2 hours
In slow cooker, simmer on high for 4 to 6 hours and low for 8 or more hours
Add 1 tablespoon pasture-raised beef gelatin per 8 ounces of liquid to add collagen
