Put the crust into a buttered tarte mold.
Preheat oven to 230 Celsius. Poke holes in the
crust (particularly if you are using puff
pastry). Peel and quarter the apples. Arrange
them on the crust. and bake until apples are
cooked tender.
For the flan, beat the eggs with the sugar. Add
the milk, cream, and vanilla and beat again.
When the apples are tender, pour the flan into
the pan and return to oven until it is firm but
not dry.
Dust it with powdered sugar to serve.
