     Cake - Carrot Cake Supreme

Ingredients
2 Cups flour
2 tsp baking powder
1 1/2 tsp baking soda
1 tsp salt
2 tsp cinnamon
1 1/2 Cup canola oil
2 Cups sugar
4 eggs
 
1 tsp vanilla
1 small can crushed pineapple drained
2 Cups carrot - grated
1 1/2 Cup walnuts or pecans - chopped

Instructions
Preheat oven to 350 degrees. Grease and flour 9x13 glass pan.
Combine oil and sugar, and add eggs 1 at a time blending well. Add vanilla.
In separate bowl combine all dry ingredients. Sift dry ingredients into wet mixture.
Stir in pineapple, carrot, and nuts. Pour into prepared pan and bake for 55-60 min. Be sure the center is cooked and set. Frost with coconut cream cheese frosting (separate recipe)
Serving Suggestions
Can also do 2 layer round cake. Very dense but moist.
