     Frosting - Carrot Cake Cream Cheese Frosting

Ingredients
1- 8 oz cream cheese
1/2 Cup or 1 square butter - softened
pinch of salt
3 1/2 to 4 cups powdered sugar
1 tsp vanilla
1 Cup coconut
1/2 Cup walnuts or pecans - chopped
 

Instructions
Cream together softened cream cheese and butter.
Blend in pinch of salt, sugar, vanilla.
Stir in coconut and nuts by hand
You can also toast the coconut beforehand in a hot pan and cool - to enhance sweetness, flavor and add some color.
Serving Suggestions
This is the frosting for my carrot cake!
