     Breakfast Casserole

Ingredients
700g hashbrowns
1 onion, diced
1 bell pepper, diced
Cubed ham or cut and fried bacon
10 eggs
1 cup whole milk
2 cups grated cheddar cheese
Salt and pepper
Oil
 

Instructions
Brown hash browns in some oil for about 7 minutes, stirring every couple minutes and salting a couple times. Place hash browns in a greased 9x13 pan.
Add a bit more oil to the pan. Sauté onions for 2 minutes. Add peppers and sauté 3 minutes more. Add ham or bacon to veggies. Spread this mixture over the hash browns.
Whisk eggs with milk and salt and pepper. Pour over hash browns. Top with grated cheese.
Bake at 350 for 45 minutes.
Serving Suggestions
Serve with a smoothie and toast or pancakes. Makes a nice supper as well.
