Brown hash browns in some oil for about 7 minutes, stirring
every couple minutes and salting a couple times. Place hash
browns in a greased 9x13 pan.

Add a bit more oil to the pan. Sauté onions for 2 minutes.
Add peppers and sauté 3 minutes more. Add ham or bacon to
veggies. Spread this mixture over the hash browns.

|
Whisk eggs with milk and salt and pepper. Pour over hash
browns. Top with grated cheese.

|
Bake at 350 for 45 minutes.

Serve with a smoothie and toast or pancakes. Makes a nice supper as well.
