     Carrot Coin Salad

Ingredients
2 lbs carrots, peeled and thinly sliced
1 green pepper, sliced
1 med onion, thinly sliced
1 can tomato soup (undiluted)
1/4 c. oil
1/2 c. vinegar
1/2 c. sugar
 

Instructions
Cook carrots for 10 minutes or until tender. Stirring, bring tomato soup, oil, vinegar and sugar just long enough to blend. Drain carrots and arrange in layers with onion and green pepper.Pour soup mixture over the vegetables and refrigerate. Serve cold. Very nice side dish. Makes 8 servings.
