     Chicken - Chipotle Chicken Coxinhas

Ingredients
2 eggs
1/2 C flour
1 tsp rosemary (optional)
1/4 C parsley fresh (or equivilant dry)
1 tsp each- garlic powder, onion powder, pepper
3 bacon strips cooked and crumbled
1 oz mozzarella shredded
Chipotle peppers from a jar - chopped to taste
1/2 tsp salt (or more to taste)
 
1 1/2 to 2 Cups panko breadcrumbs
2 Chicken breasts baked and shredded (400 degrees 25-30 min)
Canola oil for frying

Instructions
Combine shredded chicken with eggs, flour, Salt, spices, bacon, cheese and chipotle. Roll into small 2 inch balls
Roll the balls in the breadcrumbs and let sit for a few minutes.
Put enough oil in a pan to coat it well for frying. Fry a few balls at once leaving space in between -turning to brown all sides.
Serve with dipping sauce of your choice.
