     Potato - Meringue Baked Sweet Potatoes

Ingredients
3 pounds mashed sweet potatoes (fresh or frozen)
1/3 Cup butter, cut up
1/3 light brown sugar -packed
1/3 Cup pure maple syrup
3 Teaspoons orange zest
1 teaspoon salt
4 egg whites
1/2 cup granulated sugar
 

Instructions
Preheat oven to 400 degrees F Bake or microwave sweet potatoes and mash til smooth to equal 3 pounds. (optional- use 2-24 oz pkgs or frozen steam-and-mash sweet potatoes)
Add butter, brown sugar, maple syrup, orange zest and salt. Spoon mixture into 8 (6 oz ) custard cups. Place on a baking sheet.
Beat egg whites at high speed with electric mixer until foamy. Add sugar 1 TB at a time, beating until stiff peaks form and sugar is dissolved. Spread meringue over sweet potato mixture.
Bake at 400 for 10 min or until golden brown.
Serving Suggestions
You can top with mini marshmallows instead of meringue
