     Bread - Lemon Mini-Loaves

Ingredients
3 large eggs
1 Cup white sugar
1 Cup sour cream or Greek yogurt
1/2 Cup canola oil
2 Tablespoons lemon zest
1-2 Tablespoons lemon extract, to taste (not lemon oil or juice)
1/2 teaspoon salt
2 teaspoons baking powder
1 1/2 Cups flour
 
Lemon Glaze
1 Cup powdered sugar
3 Tablespoons fresh lemon juice
Yellow food coloring (optional)

Instructions
Preheat oven to 350F. Grease and flour a 9x5 loaf pan, or use cooking spray on an 8 mini loaf pan (that's what I use)
Loaf, In a large bowl combine eggs, sugar, sour cream and whisk vigorously until smooth. Drizzle in oil while whisking to combine. Incorporate the lemon zest, extract well. Then add the flour, baking powder, salt and STIR UNTIL JUST COMBINED, don't over mix. Some lumps will be present and that's okay, don't try to stir them smooth.
Turn batter into prepared pan smoothing the top lightly with spatula. Bake for 50-52 min for loaf pan, or 25-30 min for mini loaves. Just until lightly brown and toothpick comes out clean. If overcooked bread will be dry. Allow loaf to cool in pan for 30 min before turning out onto rack to cool completely before glazing
Lemon Glaze, place powdered sugar in a small bowl and slowly drizzle in lemon juice while whisking until smooth and combined. You may need to play with the sugar and lemon juice amounts for desired consistency and flavor. Spoon glaze over each loaf and let drip down the sides. Completely coat the top as much as possible. Store in the fridge so it won't dry out.
