     White Bean Parmesan Spinach Soup

Ingredients
1 tbl olive oil
6-8 minced garlic cloves
6 C vegetable stock
1 15 ounce can diced tomatoes, drained
1 tsp sugar
3/4 C fresh grated parmesan cheese
1 tbl italian dried herbs
1 tsp kosher salt
1/2 tsp black pepper
 
4 (15 oz) cans white cannellini beans, drained and rinsed
4 C baby spinach
1/2 C grated cheese
parsley

Instructions
In a large pot heat olive oil , add garlic and cook until fragrant (2 min). Add broth ,tomatoes,sugar,3/4 C grated cheese, italian herbs,salt and pepper. Bring to a boil, reduce heat and simmer for 5 minutes. Stir in the beans and spinach and continue to simmer. Stir in the parsley and season with extra salt and pepper to taste
