Spray 13x9 in baking dish. Slice bread in 12 (1 in thick) slices, then cut each slice into 1 in cubes. Combine brown sugar, cinnamon, and chopped nuts (if using).

Arrange half the bread in single layer in dish, sprinkle half the sugar mixture on top. Add second layer of of bread and sugar mixture.

Whisk eggs, add milk and vanilla and whisk until well blended. Pour egg mixture over bread and press down gently to coat. Cover with foil and refrigerate at least 4 hr or overnight.

Preheat oven to 350 degrees. Bake casserole for 20 min, then remove foil and continue baking an additional 30 min until light golden brown and slightly puffed.
