     Turkey Soup

Ingredients
1 turkey carcass with skin, bits of bones
1/2 c. left over dressing
2 stalks celery with leaves, chopped
8 c. water
2 large onions, chopped
2 large carrots, chopped
1 bay leaf
1 c. chopped onion
 
2 tsp. dried thyme
2 c. chopped leftover turkey
1 c. chopped celery
2 c. chopped carrots
3 Tbsp. fresh parsley
salt and pepper to taste
noodle or rice

Instructions
In large pot combine first set of ingredients and cover with water, bring to a simmer and cook for 2-3 hrs. Strain and discard the vegetables and bones.
Take stock and combine second set of ingredients. Heat through.
