     Vegetarian Vegetable Soup

Ingredients
31 oz. vegetable broth
1 Tbsp. butter
2 medium carrots, diced
1/2 c. corn kernals
3 medium potatoes, cut in 1/2, parboiled
1 medium tomato, cubed
1 Tbsp. olive oil
1 large onion, diced
1 c. green beans, cut in half
 
1/2 c. peas
2 Tbsp. crushed garlic
salt & pepper

Instructions
Parboil potatoes for about 10 minutes, remove from water and set aside. Heat butter and oil on medium, add garlic, onion, carrot and green beans. Saute for about 6 minutes.
Add vegetable broth, potatoes, corn, peas, tomatoes, season with salt and pepper.
Bring to a boil, cover, reduce heat and simmer until carrots and potatoes are tender.
