Rinse quinoa in mesh strainer. Rub and squish to
really clean quinoa. Drain.
Heat EVOO in pot over medium high heat. When hot,
add quinoa. Consistently stir to toast quinoa.
Add water or broth. If using water, can add salt.
Bring to boil. Then put on low heat. Cover pot
with a lid and cook for 15 minutes.
Remove pot from heat and set aside for another 5
minutes. Do not open lid! Then add vegetables of
choice and stir. Serve.
