     Mexican salad

Ingredients
4 Tomatoes, chopped
1 Red onion, finely chopped
1 large avocado, diced
1/2 Cucumber diced
1 Red capsicum, diced
1 Green or Yellow capsicum, diced
1 can sweetcorn, drained
1 can black beans drained
1 cup fresh coriander
 
1/4 cup lime juice (fresh or bottled is fine)
Salt and pepper to taste
1 cup natural yoghurt
1 tbsp chipolte sauce
1/2 cup fresh parsley

Instructions
Chop and/or drain all vegetables. Mix all together in a large bowl.
Stir in chopped coriander and the lime juice. Season to taste.
Combine the natural yoghurt with chopped parsley and chipolte sauce.
Serving Suggestions
Serve with the yoghurt sauce and shredded chicken (optional)
