Ingredients
1 tbsp extra-virgin olive oil
4 boneless, skinless chicken breeasts (4 to 5 oz each)
1/4 tsp each sea salt and fresh ground black pepper
1 tbsp minced garlic
1 small yellow onion diced
1 green bell pepper diced
1 1/3 cups uncooked instant brown rice
1 qt jar homemade canned tomatoes with liquid
2 tsp chile powder
 
2 tsp ground cumin
1/4 cup nitted and slicked green olives
1/4 cups fresh cilantro
1/4 cups crumbled chaese

Instructions
Heat oil in a large, heavy skillet over medium heat. Stir in onion, and cook until tender, about 5 minutes. Mix rice into skillet, stirring often. When rice begins to brown, stir in chicken broth and salsa. Reduce heat, cover and simmer 20 minutes, until liquid has been absorbed.
