Instructions
MISE EN PLACE- • Halve onion. Peel and dice 1
half. Save remaining half for another use. • Peel
and chop garlic. • Rinse and drain beans
• Place an ovenproof skillet over medium heat.
When hot, add 1 teaspoon olive oil and onion.
Sauté until onion is soft, about 4 minutes. • Stir
in garlic.
Add beef to skillet. Cook, stirring, until meat
is no longer pink, about 5 minutes.Season with
1/4 teaspoon kosher salt, 1/4 teaspoon black
pepper and smoked paprika ADD additional
seasonings for spicier chili. • Stir in beans,
tomatoes and 1/2 cup water. PREHEAT OVEN TO 350
Cook, stirring occasionally, 10 minutes.
While chili cooks, in a bowl whisk together
cornmeal, flour, baking soda, and optional
sugar and 1/4 teaspoon kosher salt. Stir in egg
and milk.• Remove chili from heat. Taste and
adjust seasoning as desired. • Dollop cornmeal
in 6 (1/4 cup) dumplings on top of chili. SAFETY TIP. When
placing skillet in oven, wrap handle tightly with aluminum foil.
This will help remind you that the handle is very hot. Ist super
easy to forget and grab the hot handle especially when you've
taken it from the oven and set on stove/countertop for serving.
Transfer skillet to oven. Bake until dumplings are
cooked through, 25 minutes.Divide chili and
dumplings between 2 bowls. Top with sour cream
as desired, and enjoy!
