     Chicken Breasts & Asparagus Foil Packets

Ingredients
2 chicken breasts
14 asparagus stalks
1 sliced lemon & juice of 1 lemon
1 small shallot
1 clove of garlic
1 handful fresh parsley
salt and pepper
 

Instructions
Preheat oven to 400 degrees. Peel and finely chop shallot. Peel and cut the garlic clove in half, crush with two pieces with the flat of the blade. Wash the asparagus and cut the ends of the stalks off.
Place each chicken breast onto their own foil square. Brush with olive oil. Place 7 asparagus stalks on each foil. Cover with the garlic, sliced lemons, shallots and parsley. Bake for 20-30 minutes or until chicken is cooked through and asparagus is tender.
Serve with lemon wedges and fresh parsley.
