1/2 cup roasted red peppers, cut into 1 x 1/4 inch strips
2 cups silvered fresh spinach
1 1/2 tsp. salt
1/2 tsp pepper
1 1/2 cups half and half
1 cup whipping cream
1/4 cup dry sherry
1 cup Panko Japanese-style bread crumbs
2 tablespoons butter or margarine
Instructions
Cook pasta in boiling water according to package directions.
Do not rince. Toss with oil and cool.
In large bowls combine pasta with crab delights, cheese, red
pepper, spinach, salt and pepper. Refrigerate, covered,
overnight.
Bring to room temperature, about 1 hour. Combine half and
half, cream and sherry. Stir into pasta, spoon into buttered 9
X 13 inch glass backing dish. Combine crumbs and butter;
set aside.
Bake covered in a preheated 425 degree oven for 15
minutes. Stir, top with crumbs. Bake, uncovered until light
golden brown (10 - 15 minutes longer) serve immediately.
