     Puerco Pibil

Ingredients
5 tablespoons annatto seeds
2 teaspoons cumin seeds
1 tablespoon whole black pepper
8 allspice berries
1/2 teaspoon of cloves
2 habanero peppers, minced
8 cloves garlic, minced
1/2 cup orange juice
1/2 cup white vinegar
 
2 tablespoons salt
5 lemons, juiced
1 shot tequila
5 lbs pork butt

Instructions
Grind spices into a powder. Blend powder with remaining ingredients for marinade.
Cut pork into 2" cubes. Place pork in a ziplock bag and coat with marinade. Shake well.
Marinate for up to twenty four hours.
Pour pork and marinade into a baking pan lined with banana leaves. Cover with leaves, wrap up, and cover pan tightly with tin foil. Bake at 325 degrees for four hours.
Serving Suggestions
Serve over white rice.
