     Mediterranean Marinade for Fish

Ingredients
1/2 tablespoon dried oregano
1 teaspoon lemon zest
Juice of 1 lemon
Capers to taste
1 clove fresh garlic, minced
Scant crushed red pepper flakes
1/2 tablespoon red wine vinegar
1/2 cup olive oil
1 1/2 lbs Amberjack, grouper, or other light fish
 

Instructions
Combine all ingredients except fish to make marinade. Make a foil pan with sides tall enough to accommodate fish fillets and marinade. Place foil pan on a cookie sheet for grilling.
Place fish onto foil, pour marinade on top. Grill until fish flakes. Place fish on platter and pour remaining marinade over the top.
