1 16 oz can whole tomatoes, drained and chopped (reserve juice)
2 cups cooked rice (see below)
1 c (4 oz) shredded sharp Cheddar cheese
1/2 cup minced onion
1 teaspoon salt
1/2 teaspoon pepper
Instructions
Brown ground beef and garlic in a large skillet over medium
heat, stirring until meat crumbles. Drain and place in a large
bowl. Add field peas and remaining ingredients, stir well. Pour
reserved tomato juice over top. Place mixture in a lightly
greased 13x9x2 inch baking dish.
Bake, uncovered at 350F for 20 minutes. Great served with
hot sauce.
2 cups of rice- 1 1/3 cup water, 2/3 cup rice
