     Lentil Mushroom Pasta Sauce

Ingredients
1 T EVO
1 c diced onions
2/3 c diced carrots
2/3 c diced celery
2 tsp minced garlic. (really.....4 is better)
3 c finely chopped mushrooms.8 oz should make 3 c
1 jar marinara sauce
1 can petite cut tomatoes 19 oz
1 T balsamic vinegar or red wine
 
2 tsp Italian seasoning
1 can lentils 19 oz. I cooked my own and used 2 c cooked
2 T parsely optional

Instructions
Heat olive oil in lg pot and add onion carrot celery and garlic. Cook and stir until veg begin to soften about 3 min. add mushrooms I ran them through food processor. cook another 5 min.
Stir in marinara sauce tomatoes vinegar and Italian seasoning. Bring to a boil. Reduce heat to low and simmer for 15 min. Add lentils and cook for additional 5 min. Remove from heat and stir in parsley if using.
this is better if can be made a day ahead but is still great even if you cant. I used on Spaghetti Squash and on zucchini noodles. Yummy. Even Bill ate without complaint..LOL
