     Beets and Sweets Budda Bowl

Ingredients
Creamy Balsamic Dressing
1/4 c olive oil
2 T white balsamic vinegar. I used regular balsamic.
2 T mayo
1 T lemon juice
2 tsp maple syrup or liquid honey
1 tsp dijon (I used grainy)
1/2 tsp minced garlic
1/4 tsp S&P
 
Bowl Ingredients-
2 c peeled cubed beets 1/2 inch
3 tsp EVO
2 c cubed sweet potato 1/2 inch
1 small red onion cut in wedges
2 c coarsely chopped kale
1/4 c walnut pcs
2 c cooked quinoa or rice (barley and wild rice)
1/4 c crumbled feta

Instructions
Whisk together dressing and set aside. Line a baking pan with parchment paper and pre heat oven to 425.
toss beets with 1 tsp oil. Bake for 15 min. Move beets to one side of pan. toss sweet potatoes and onion with1 tsp oil. add to beets. roast 15 min. Slide potato and onion over towards beets. Toss kale with 1 tsp oil. Massage it in. Place on baking sheet. Add walnuts to pan but do not toss in oil. Roast 5 min.
To assemble place 1 cup of grains in bottom of a bowl. Top with veggies, walnuts, and feta then drizzle with dressing. Makes two servings.
