Use a fork to poke small holes in the pork in order
to help the marinade penetrate. Combine all the
seasoning in a ziploc bag. Set aside 2Tb of the
marinade in a small container. Add pork to the
ziploc bag. Marinade overnight.

Insert the steamer tray into the IP. Pour in the
marinade from the ziploc bag and the pork into
the IP. Line the pork into one single layer on
the steamer tray. Add the soda. Pressure Cook,
High Pressure for 15 minutes, then natural
release for 5 minutes.

Set oven to broil on high. Remove meat from IP and
place on foil lined baking sheet. Baste the
remaining 2Tb of marinade onto the pork. Slightly
char the pork. Then flip, baste and char the other
side.

Let pork cool, and then thinly slice.
Xa Xiu dipping Sauce- Pour 1 cup of the meat
juice from the IP through a sieve into a small
pot. Bring to boil on stove top. Mix 1Tb corn
starch with 1Tb water in a small bowl. Add
slowly to the pot and whisk well.
