     Best-Ever Soft Pretzels

Ingredients
1 env (2- 1/2 tsp) active dry yeast
1-1/2 c very warm (110°F) water
1Tblsp Sugar
2 tsp Salt
4c All-purpose Flour
1 egg yolk
1Tblsp water
about 1/4 c coarse salt (kosher/pickling)
 

Instructions
Preheat oven to 425°F. Generously grease a large baking sheet.
Dissolve yeast in the warm water in a large bowl. Stir in sugar & salt until dissolved. Add flour, mix well.
Turn onto floured surface & knead about 5 minutes. Cover and let rest 5-10 minutes. Roll dough into a log and cut into 16 uniform pieces. Shape into balls & cover. Taking one at a time, roll out into a rope, and twist into pretzel shape. Place on well-greased baking sheet. After all have been shaped & placed on sheet, mix egg yolk with water and brush gently over pretzels. Sprinkle lightly with coarse salt.
Bake at 425° for 20 minutes, until golden.
Serving Suggestions
Serve with Don't A'choke Dip, mustards, or other dips of your choice.
