Preheat oven to 425°F. Generously grease a large baking
sheet.

Dissolve yeast in the warm water in a large bowl. Stir
in sugar & salt until dissolved. Add flour, mix well.
|

Turn onto floured surface & knead about 5 minutes.
Cover and let rest 5-10 minutes.
Roll dough into a log and cut into 16 uniform pieces.
Shape into balls & cover. Taking one at a time, roll
out into a rope, and twist into pretzel shape. Place
on well-greased baking sheet. After all have been
shaped & placed on sheet, mix egg yolk with water and
brush gently over pretzels. Sprinkle lightly with
coarse salt.

Bake at 425° for 20 minutes, until golden.
