     Potato Cakes My Way

Ingredients
boiled cold potatoes shredded to equal 3 to 4 cups not packed
1 finely diced onion
1 egg beaten
2 T flour
S and P
 
Instructions
mix all ingredients together and form into smallish patties. Fry in a pan lightly coated with veg oil till golden on each side.
Serve with sour cream and crumbled bacon. Or Apple sauce is nice too.
It has been suggested that cooked crumbled bacon could be added to the potato cakes before frying. Next time maybe.
