     Shrimp and Avocoda Cobb Salad

Ingredients
4 center cut bacon slices (or precooked))
1 lb large shrimp, peeled & deveined
1/2 t. paprika
1/4 t. black pepper
cooking spray
1/4 t. salt, divided
2 and 1/2 T fresh lemon juice
1 and 1/2 T olive oil
1/2 t. dijon mustard
 
1 package lettuce
2 cups cherry tomatoes
1 cup shredded carrots
1 cup whole kernel corn
1 peeed avocado, cut into wedges

Instructions
Cook bacon in skillet until crisp. Remove bacon from pan; cut. Wipe pan clean with paper towels. Increase heat to medium-high. Sprinkle shrimp with paprika and pepper. Coat pan with cooking spray. Add shrimp to pan, cook 2 minutes on each side till done. Sprinkle with salt, toss to coat.
while shrimp cooks, combine remaining 1/8 t. salt, juice,oil, and mustard in large bowl, stirring with a whisk. Add lettuce; toss to coat. Put lettuce on plate and divide other ingredients on the top.
