5 lbs. sweet potatoes, medium size, scrubbed and pierced with fork
1/2 c. orange juice
1/2 tsp. salt
1/4 tsp. cinnamon
1 Tbsp butter
2 medium apples, peeled, cored, and sliced 1/4 in thick
1/2 tsp. nutmeg
1/4 tsp. pepper
Instructions
Preheat oven to 400 degrees. Place potatoes on baking sheet and
bake until soft, about 1 hour. Remove potatoes and decrease temp
to 350 degrees.
Melt butter on large skillet over medium high heat. Add apples and
cook until golden and tender, turning occasionally, about 7
minutes. Remove from heat.
Cut potatoes in half and scoop out pulp into large bowl. Add juice,
salt, nutmeg, cinnamon, and pepper. Mash or process until smooth.
Lightly coat a 2 qt baking dish with cooking spray. Scrape potato
mixture into dish, arrange sauteed apples over top. Bake until
bubbly around edges, about 30 mins. Sprinkle with cinnamon.
