     FRENCH MACARON FILLINGS

Ingredients
GEL FOOD COLORING neon pink, mint green, royal blue, violet, lemon yellow
EXTRACTS almond, mint, vanilla
JAM blueberry, seedless raspberry, pineapple
3 oz chopped White Chocolate
2 T Heavy Cream
1 T Butter
 
4 oz softened Cream Cheese
3/4 c mascarpone cheese
2 T honey
1 tsp ground dried lavender

Instructions
ALMOND RASPBERRY FILLING - Tint the batter with 2 drops neon pink gel food coloring and flavor with almond extract. Fill with seedless raspberry jam. You will need about 3/4 cup.
MINT WHITE CHOCOLATE FILLING - Tint the batter with 2 drops mint green gel food coloring and flavor with mint extract. For the filling, microwave 3oz chopped white chocolate, 2 T heavy cream and 1 T butter in 30 second intervals, stirring until smooth. Stir in 1/4 teaspoon mint extract and 1 drop mint green gel food coloring.
BLUEBERRY CHEESECAKE Tint the batter with 3 drops royal blue gel food coloring and flavor with vanilla extract. FILLING mix 4 oz softened cream cheese and 3 T blueberry jam. LAVENDER HONEY Tint the batter with 2 drops violet gel food coloring and flavor with almond or vanilla extract. FILLING mix 3/4 cup mascarpone cheese, 2 T honey and 2 tsp ground dried lavender.
PINEAPPLE Tint the batter with 2 drops lemon yellow gel food coloring and flavor with vanilla extract. FILLING press 3/4 cup pineapple jam through a sieve discarding any large pieces.
