     Enchildadas

Ingredients
2 cans (10oz) Red enchilada sauce (mild or medium)
1 lb ground beef
1 can chopped green chillies
1 medium onion chopped small
1 1/2 cups shredded cheese (8oz)
1 package flour tortillias 6 inch size
 

Instructions
Heat oven to 375 degrees. Lightly grease 9 by 13 inch casserole baking dish. Cook beef with onion until small size. Drain thoroughly. Mix half the can enchilada sauce, can of chillies and half the cheese into the meat/onion mixture. Pour some of the enchilada sauce in the casserole dish, cover the flour tortilla with the sauce and then spoon the meat mixture into the tortilla and roll up one at a time.
Should make 8 to 10 large enchiladas. Pour the last can of red sauce over the enchiladas cover with the left over cheese and bake for approximately 15 to 20 minutes until well heated and cheese melted.
