Ingredients
1 - 1 1/2 lbs. boneless, skinless chicken breasts
1 (14.5 oz) can diced tomatoes
1 can chicken broth
2 tsp. chilli powder
2 tsp. salt
1 tsp. cumin
1 c. brown rice
1 (15 oz) can black beans
1 c. frozen or canned corn
 

Instructions
Combine the chicken, diced tomatoes, chicken broth, chilli powder, salt, and cumin in the slow cooker. Make sure the chicken is covered. If not, add more chicken broth. Cover with lid and cook on low for 3-4 hours.
Remove lid and add rice, black beans, frozen corn, and some chicken broth if needed. Replace lid and cook for 3-4 hours on low. Cooking is done when rice is tender. Shred the chicken.
You can also cook it on high for 4 hours and add your rice, black beans, and corn after the first 2 hours.
