1/2 cup canola oil
1/2 cup sugar
1/2 cup dark, full flavored honey
2 eggs
1 small orange not peeled - quartered and seeded
1 small apple - not peeled cored and copped
3/4 cup strong brewed coffee
2-1/2 cups flour - all purpose
1-1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp allspice
1/2 tsp cinnamon
1/4 tsp cloves - ground
1/2 cup raisins - optional
350 oven - 2 loaf pans parchment paper

Combine oil, sugar, honey and eggs. Beat until chunky smooth. Set aside. Blender or food processor, combine the orange, apple and pulse until finely chopped. Add coffee and pulse until mostly pureed. Set aside.
Sift together the flour, b.soda, b. powder, and spices. Add 1/3 fruit and coffee mixture o the oil, honey, and egg mixture, stirring well. Add 1/3 flour mixture, stirring again. Continue adding until all ingredients are combined. Stir in raisins.
Divide the batter bt the loaf pans. 30-35 mns Cool cakes in pans on rack. Leave parchment paper on until serving.
