Cream butter and brown sugar. Add egg and vanilla; mix well. Combine flour, baking soda and salt; gradually add to creamed mixture. Fold in pecans or coconut (dough will be sticky).
Shape into two rolls and place on parchment paper; wrap tightly. Chill 4 hours or overnight. Cut into 1/4 inch slices. Place 2 in. apart on greased baking sheets or lined with parchment.
Bake at 375 degrees for 7-10 minutes. Remove to wire racks, cool. Makes 3 and 1/2 doz.
