     Veggie Salad -Broccoli Salad

5 C small brocooli florets
1 C mayo
1 TB apple cider vinegar
1/3 C onion chipped
1/4 C sugar
3/4 C raisins
1/2 C sunflower kernels
8 oz bacon

Cut bacon into hot pan and cook over medium heat until crisp. Drain on paper towels
Blanch broccoli in boiling salted water until bright green and slightly softened...2-3 min. Drain well, run under cold water to stop cooking.
In mixing bowl combine mayo, vinegar, onion, sugar and raisins. Add broccoli and toss to coat with dressing. Refrigerate for 1 hour.
Just before serving fold in the sunflower kernels and the bacon pieces. Serve immediately.
