     Braised leeks with dill, parsley and mint

Ingredients
4 trimmed leeks
2 tbsp finely chopped mint
2 tbsp finely chopped dill
4 tbsp finely chopped parsley
125ml extra virgin olive oil
 

Instructions
Preheat over to 200c. Trim and and wash the leeks leaving the base of the root to hold the leaves together. Quarter the leaves lengthways and arrange top to tail in a shallow baking dish that can hold them in a single layer. Season lavishly with salt and pepper and sprinkle the herbs between and over the top. Poor in the olive oil and 200ml boiling water. Cover the dish with tin foil. Bake in the preheated oven for 30-40 minutes until the leeks are completely tender. Can be served hot, warm or cold.
