     Salmon Baked with Thousand Island Sauce

Ingredients
For the sauce
mayonnaise - 3 heaped tbsp
creme fraiche - 1 tbsp
tomato ketchup - 2 tbsp
pickled red peppers - 2 tbsp available to purchase in jars finely diced
red onion, - 1 tbsp finely diced
spring onion - 1 tbsp diced
red wine vinegar - 1 tsp
brandy or whisky - 2 tsp optional
 
Tabasco sauce - splash to taste
For the salmon
salmon fillets
lime juice - squeeze
Dressed salad leaves to serve

Instructions
To make the Thousand Island dressing combine Mayonnaise, creme fraiche and ketchup, then add the peppers, onions and stir them into the sauce. Add vinegar, brandy or whisky Tabasco sauce and salt. Put in fridge for at least one hour for flavours to blend.
Pre heat oven to 400F then add salmon fillets to baking sheet. Bake 15 to 20 minutes depending upon thickness. Squeeze lime over fillets and a pinch of salt.
Give the sauce a good stir and put a pool of it in the centre of each plate. Place a salmon fillet on the sauce and finish with some dressed seasonal leaves.
