5c of chopped and peeled fresh peaches (1lb frozen unsweetened) sliced peaches
1 package (3/4oz fresh basil), leave whole
2c cold water
1.5c fresh lemon juice
Additional cold water
Ice cubes
Instructions
In a large saucepan, combine sugar, peaches, basil
and water; bring to a boil. Reduce heat; simmer,
uncovered for 5 minutes. Remove from heat; let
stand for 30 minutes to cool. Discard basil; stir
in lemon juice.
Place peach mixture in a blender; cover and process
until blended. Place in fridge to chill. Add
additional cold water to reach desired consistency.
Then add ice.
NOTE- Can add champagne or club soda instead of
additional cold water.
