Wash off fillets and dry with paper towel.
Brush meat side of filet liberally with olive oil,
Salt liberally and cover with Ground black pepper,
Sprinkle parsley and paprika until covered.
On a medium pre-heated grill lay fillets on with scale side
down. They will cook entirely on the scale side.
Close lid and check every 5 minutes until meat turns white and
flakes at the thick end with a fork. Serve hot.
Optional - brush with butter before serving
Optional - sprinkle with garlic powder before serving
Optional- squeeze fresh lemon on filets when served
