     Easy Potato Salad

Ingredients
2 lbs small yellow, red or white potatoes
1 Tbsp apple cider vinegar
1/2 c sour cream (or French onion dip)
1/4 c mayonnaise
1 Tbsp yellow mustard
1/2 medium red onion, chopped (about 1/2 c)
3 celery stalks chopped (about 1/2 c)
1 medium dill pickle, chopped (about 1/3 c)
7 hard-boiled eggs, peeled and chopped
 
1/4 c chopped fresh herbs like parsley, dill, chives, tarragon, or cilantro
Salt and pepper to taste

Instructions
Place potoates in a large pot and cover with 1 1/2 inches of water. Add 1 tsp salt for every quart of water. Bring to a boil then reduce to a low simmer. Cook 15 to 20 minutes or until potatoes can easily be pierced with a fork. Meanwhile, set up an ice bath in a medium bowl. Drain potatoes from cooking pot and put in ice bath. Once cool, peel potatoes by gently pinching the skin and pulling it away. Chop peeled potatoes into bite-size chunks and place in a large bowl. Scatter the vinegar over potatoes and lightly season with salt.
De-Flame the onions. While the potatoes cook place chopped onions in a small bowl and cover with warm water. Let sit for 10 minutes then rinse.
