1/2 cup maple syrup or other sweetner (I used 1 cup swerve)
1/3 cup unsweetened cocoa powder
1 tsp baking soda
3 Tbsp coconut oil melted
1 tsp vanilla extract
1/3 cup chocolate chips (I use dairy free)
Instructions
Preheat oven to 350.
Prepare muffin cups with muffin papers or
nonstick cooking spray
Mash chick peas in large bowl, add rest of
ingredients to the chick peas except for choc
chips. When well blended, mix in choc chips.
Spoon into muffin tin.
Bake 10-12 min.
I made 16 mini muffins and baked 15-20 min before
it was done. Very good. The chocolate chips make
the difference. Couldn't even tell it was made out
of beans.
