1/2 STICK BUTTER MELTED
1 TSP BUTTER ROOM TEMPERATURE
1 CUP GRAHAM CRACKER CRUMBS
2 POUNDS CREAM CHESE ROOM TEMPERATURE
1 1/2 CUP SOUR CREAM
12 OZ SOFT GOAT CHEESE SUCH AS MONTRACHET
2 EGGS
2 CUPS SUGAR
1 TBS VANILLA
 
2 TBS LIME JUICE
2 TBS GRAND MARNIER

Instructions
OVER 350 GREASE THE SIDES OF A 9 INCH SPRING FORM PAN WITH THE TSP BUTTER MAKE THE GRAHAM CRACKER CRUST PRESS INTO THE SPRINGFORM PAN
BEAT CREAM CHEESE UNTIL THICK AND CRAMY ABOUT 5 MINUTES BEAT IN 1 CUP OF THE SOUR CREAM THE GOAT CHEESE THE EGGS AND THE SUGAR ABOUT 5 MINUTES ADD VANILLA AND LIME JUICE BEAT UNTIL FULLY INCORPORATED ABOUT 2 MINUTES
POUR FILLING OVER THE GRAHAM CRACKER CRUST BAKE FOR ABOUT 1 1/2 HOUR TILL SPRING FIRM REMOVE FROM THE OVER AND COOL TO ROOM TEMPERATURE IF MAKING AHEAD PULL FROM THE COOLER ABOUT 1 HOUR PRIOR TO SERVING
RUN KNIFE AROUND THE PERIMETER AND RELEASE THE CAKE FROM THE RING COMBINE THE OTHER 1/2 CUP SOUR CREAM WITH THE GRAND MARNIER SPREAD ON TOP OF THE COOLED CHEESE CAKE CUT WITH A WARM KNIFE
